Salt farms in France, operate by allowing the ocean waters to invade the land into successive numerous small clay compartments where they are then set to evaporate by the sole action of the wind and the sun. After partial evaporation, when the concentration reaches 10 fold its original state, the salt minerals appear in crystal forms of a grayish color. They are hand raked in this form, frequently washed in fresh ocean water and finally set aside in small piles for drying, before being collected in specific wooden storage areas to terminate the process.
This is the coarse sea salt, of a gray appearance in large crystal forms. It is still high in moisture from the ocean due to a non oven drying process.
Coarse sea salt is unrivalled in medical treatments (mouth washes, water drainage, edema reduction, disinfection, baths etc.), but also in cooking, and in food preservation.
For medical uses, the coarse salt is by far the preferred type. Cooking also requires the use of coarse salt, which is always incorporated in the pan in the latter stages of the cooking. Many recipes “en croute” have been given using exclusively coarse sea salt. Ask for one of ours, or ask your favorite chef.
Coarse sea salt is one of the few indispensable elements to have available at home at all times. It constitutes one of the most valuable elements of the natural home pharmacy.
